PAVLOVA
5 egg whites
5 tbsp castor sugar
5 tbsp icing sugar
1 tbsp corn flour |
FILLING
150 ml cream
2 tbsp castor sugar
1 vanilla pod split length ways, de-seeded
seasonal fruit selection (strawberries, gooseberries, apple, pear and cherries) |
Sieve together the castor sugar, icing sugar and corn flour
Place the egg whites in a kitchen aid and whisk on high
Add the sugar/corn flour in 3 stages, beginning, middle and until stiff peaks
Place the egg whites into a piping bag and pipe nest shapes onto a lined baking tray
Place in an oven and bake at 50°C for 1 hour
Remove from the oven and cool on a rack for 30 min
Store in an airtight container and use when needed (keeps for up to 2 weeks)
Place the cream, caster sugar and vanilla pod seeds in a mixing bowl and whisk until stiff peak
Place a meringue in the centre of you plate, place the 'chantilly cream' on top and add confetti of fruits, garnished with rose petals
